Biochemical composition of some Echinodermata (Holothuroidea, Echinoidea) from the Red Sea, Egypt

Abstract In the present study, biochemical composition of some Echinodermata (Holothuroidea, Echinoidea) from Red Sea, Egypt was investigated. The results showed that highest percentage saturated fatty acids (SFA) in Holothuria nobilis and lowest recorded scabra. monounsaturated (MUFA) Pearsonothuria graeffei while atra. polyunsaturated (PUFA) omega-3 Stichopus hermanni however, Diadema setosum. omega-6 Bohadschia vitiensis where, addition, nonessential amino acid (NEAA) glycine were all species serine Essential (EAA) arginine cysteine lowest. All NEAA concentrations S. except proline. essential histidine, isoleucine, phenylalanine, leucine. latter high graeffei. Tyrosine, valine, threonine, hermanni. study proved sea cucumbers has great nutritional value.
